Eating Mudbugs

August 11, 2016.
We have gotten in the habit of letting Kc choose what to eat for supper each Thursday. He likes to change things up, so we are not constantly stuck with pizza, mac & cheese, or burgers. He enjoys a regular home-cooked meal just as much.
We have no idea where he got it, but last week he asked what mudbugs were. We explained it to him and told him they were officially called crawfish, also know as crawdads or mudbugs.
Kc: "I have never eaten mudbugs before".
Opa: "What? Then it is time you do".
It sure is, because every self-respecting southerner has eaten mudbugs at least once in his life time and preferably more often then that. The crawfish were quickly found at our local grocery store and equally prepared.
I had my doubts if Kc would eat them, since they look like a mix between mini-lobsters and overgrown shrimp with legs, claws, and feelers sticking out every where. I was wrong.
He had no reservations when it came to picking them up, twisting their heads off and getting to the meat inside the tails.
And, as a true southerner, he sucked the heads.
Upon asking how he liked the mudbugs, his reply was clear and concise.
"They are delicious!"
